how we interact with the environment, this book
contributes a great deal to our understanding.
Written by Mark Bittman, author of a couple of
cookbooks and the weekly New York Times column
"The Minimalist", he takes you through
a responsible eating plan that is as good for
the planet as it is for your weight and health.
Using an example most of us can
relate to, he explains that in terms of energy
consumption, serving a typical family of four,
steak dinner, is the rough equivalent of driving
around in a SVU for three hours whilst leaving
all the lights on at home! He explains and demystifies
buzzwords like 'organic', 'sustainable' and 'local'
and offers straightforward, budget-conscious advice
that will help you make small changes that will
shrink your carbon footprint as well as your waistline.
His plan is based on hard
science as well as giving you plenty of leeway
to tailor your food choices to your lifestyle,
schedule and level of commitment. Bittman states
that he lost thirty-five pounds and had an improvement
in his blood levels by simply cutting meat and
processed foods from two of his three daily meals.
